Refrigerator Pickles

Oh yes, I am sooooooo ready for Fall, cool, crisp, clean....my favorite season!!!  Then we move into my second favorite season....WINTER!!!!  Many of you have already said you are not looking forward to any of that and want summer to last longer!!!  No more hot, sticky, can't breathe, bug infested, drought, dead flowers and lawn, not to mention SWEATY, summer!!!  No thanks......

So to celebrate I made pickles today and they are yummy......this recipe uses yellow summer squash!!!

In large pottery or glass bowl, combine 2/3 cups salt and 3 quarts of water, add 8 cups sliced yellow squash (I used 4 medium to small), cover with dinner plate and weigh down to keep squash under the brine.....let stand 3 hours.  Drain well in colander and give a gentle squeeze.....

In large kettle combine 2 1/2 cups sugar, 2 cups vinegar ( I used cider, but you can use white), 2 tsps. mustard seeds, 1/2 T. whole cloves, 1 small cinnamon stick broken up, 1/2 tsp. turmeric, 1//2 tsp. celery seed, 1 clove garlic sliced.  Bring to a boil, stirring to dissolve sugar.

One green pepper, halved, seeded, and thinly sliced.

One red pepper, halved, seeded and thinly sliced.

Two medium - sized onions, thinly sliced....(I used one large Vahalia)

When mixture comes to a boil, add drained squash, and veggies, return just to boiling. and turn off heat, let cool.....transfer to containers with tight fitting lids.  Refrigerate, will keep several weeks, even more than a month!!!

I have never had squash pickles, but I would love to try them, I am a pickle-a-holic! I love pickles in all forms, I eat them almost everyday.

This is something new to try. I love pickles and I love squash so I am sure they are a winner!

I will be thinking of you as I shovel snow and rake leaves...lol!!
Me? I am a spring loving gal and then summer. Not so much fall and winter when everything is either going to sleep or is sleeping.
